I admit, I have an addiction to snacking. This is mainly because my workday seems to fly by without having a moment to eat a full meal. food = nutrition = energy, which I compromise from time to time. With lack of energy here and there, I need something to pick me up throughout the day. Through endless pinterst nights of searching and trial and error, I found a recipe that is seamless.
Recipe (approximate 12 energy balls)
- 1/2 cup oats
- 1/2 cup all natural peanut butter
- 1/3 cup all natural honey (or agave syrup)
- 1/2 cup dark chocolate chips
- 1/2 cup unsweetened coconut shreds
Simply mix all ingredients together. Take a table spoon to scoop out and roll into bite size balls. I placed parchment paper onto a baking sheet and placed in fridge for about an hour. Voila!
